1. Raw material and source assessment
Harvest timing, growing conditions, visual quality, aroma profile and foreign-matter status are assessed before processing. Lot-based intake records connect the source to each subsequent operation and support traceability.
2. Cleaning and preparation
Stone, stems, dust and other foreign material are removed through product-appropriate sorting and cleaning. Whole, broken and ground products require different process controls, particularly for equipment hygiene, particle-size targets and product changeovers.

3. Analysis, storage and dispatch
Chemical, microbiological and physical results are reviewed together against the agreed specification. Approved lots are stored under suitable conditions with attention to moisture, packaging integrity, segregation and stock rotation. Product identity, lot information, packaging and requested documents are verified again before dispatch.
